Lemon Orzo Salad with Chicken
THIS. SALAD. I have been trying to meal prep our lunches lately and this salad was my first attempt and it has us hooked! If you are looking to add more greens to your diet, this is for you!
It was so easy to prep because the veggies are all chopped pretty thick and orzo is simple to cook. I have only used orzo a handful of times and have loved it but you could substitute another pasta and get just as good of an effect! We had the orzo on hand though and I love using it when I get a good opportunity.
The original recipe I saw used chickpeas but I decided to go with chicken and I am very happy with how it turned out! Ever since I learned how to cook the perfect chicken breast, future post coming on that, I love adding it to bowls and salads for a little extra protein and love how it tastes with lemon.
I finished it off with some feta and added salt and pepper, mixed it all together and put it in the fridge for the next days lunch! It was perfect and my husband was texting me wanting it every week. Next time I think I will add some tomatoes :) I am glad to have found a great lunch staple added to our list and hope you love it as well! Posy loves it as well...
- 1 cup uncooked orzo
- 2 handfuls fresh baby spinach
- 1 chicken breast
- 1/2 cucumber
- 1/2 of a red onion
- 1/2 cup fresh basil leaves
- 1-2 lemons
- olive oil
- salt and pepper
- crumbled feta
Cook the chicken and let it rest. Cook the orzo by the specifications on the package and drain. Chop the spinach, cucumber, red onion and basil and toss in a bowl. Add the orzo and chicken. Juice lemons to taste and add olive oil and salt and pepper, also to taste. Add feta and toss! Then refrigerate and eat whenever!
